Waltanna Farms sit on the basalt plains at the foothills of the Grampians in south-west Victoria. The Nagorcka family has farmed this land for over 140 years, with each generation building on a deeper understanding of how to grow, handle, and process crops within this specific landscape.
Today, Waltanna is primarily focused on flaxseed; or linseed, if you prefer. What sets them apart is not just that they grow it, but that they retain control of the entire process, from paddock through to finished product.
A Fully Integrated Farm System
Most oilseeds in Australia move through multiple hands. They are grown in one place, processed in another, and packaged somewhere else again.
Waltanna has taken a different approach.
Everything happens on farm. The flax is grown, harvested, cleaned, cold-pressed, milled, and packed on site. This reduces handling and allows each step to be managed with the end product in mind, rather than treating growing and processing as separate systems.
For customers, this shows up as consistency and traceability. You are not buying an aggregated product. You are buying from a single farm.
Built Around the Nature of Flax
Flaxseed is not a forgiving crop once it leaves the paddock. Its oils are sensitive to heat, light, and oxygen, and the way it is handled has a direct impact on flavour, stability, and nutritional quality.
Waltanna has built its processing around this constraint.
The family designs and fabricates much of their own equipment, allowing them to control pressing temperatures and handling conditions in a way that suits flax specifically. The goal is straightforward: retain the integrity of the seed as much as possible as it moves into oil or meal.
This is where their approach diverges from more industrial systems, which are typically optimised for throughput rather than preservation.
Farming with the Soil in Mind
Waltanna’s production system has been moving away from chemical inputs for decades, with organic certification established on parts of the farm in the late 1990s.
Their current approach sits within a broader regenerative framework. In practical terms, that includes:
- Rotational cropping to manage weeds and maintain soil balance
- Dense planting to naturally suppress competition
- Building organic matter through cover crops and composting
- Reusing by-products within the farm system
The emphasis is not just on avoiding inputs, but on building soil function over time. Healthier soils tend to produce more resilient crops, which in turn require less intervention post-harvest.
