This White Buckwheat Flour is grown, milled and packed by Bio-Oz, a family-owned grain operation based in Parkes, Central West NSW. It’s made using only the Buckwheat kernels (groats) of the buckwheat seeds, resulting in a pale, fine-textured flour that is lighter in colour and milder in flavour than the original buckwheat flour we have always carried.
Buckwheat is not a grain but a pseudograin — completely gluten-free and naturally rich in resistant starch and fibre. Bio-Oz mill this flour in their dedicated gluten-free facility, which means there is no risk of contact with glutinous grains, making it suitable for coeliacs and gluten-free bakers.
How is this buckwheat flour milled?
White buckwheat flour is milled from 100% buckwheat kernels (with the outer hull removed), using fine steel roller mills. This gives a softer colour and flavour profile than the original grey buckwheat flour, which includes the hull. The result is a finer flour that’s more versatile for light-textured baked goods and delicate recipes.
What’s the difference between white and Bio-Oz's original buckwheat flour?
-
White buckwheat flour is made from just the kernels, giving it a lighter colour, smoother texture and milder flavour.
-
The original buckwheat flour (which we call grey) includes the a 50:50 mix of whole buckwheat and buckwheat kernels, giving you a darker, richer and more robust flavour.
