About the Mill
Four Leaf Milling is a family-run business based in Tarlee, South Australia, in the fertile Gilbert Valley. With the original farm founded by Gavin Dunn in 1969 (and the mill a decade and a bit later in 1983), Four Leaf Milling has been a pioneer of organic grain processing in Australia. The mill sources grain from its own certified biodynamic farm and other organic growers, producing high-quality rolled oats, flours, meals and cereals using traditional slow-speed methods that preserve nutrition, flavour, and integrity.

What Are Stabilised Rolled Oats?
These are oats that have undergone a gentle stabilisation process — where the freshly harvested grain is lightly steamed to neutralise enzymes (lipase) that would otherwise cause the natural oils in oats to go rancid over time. The result is a longer shelf life and a cleaner flavour, while still retaining the oat’s original nutritional value. After stabilisation, the groats are rolled to a tender thickness of 0.35mm, giving them a chewier satisfying texture.

FAQs
What is the difference between stabilised and unstabilised oats?
Stabilised oats are gently steamed before rolling to reduce the activity of lipase (a natural enzyme), slowing oxidation and extending shelf life. Unstabilised oats are raw and may have a slightly nuttier flavour but can go rancid within weeks of processing.
Are these oats suitable for overnight oats?
If we were to choose one oat, we tend to prefer the creamy oats for overnight oats. But mixing a few of these guys will give you a bit more of a chew.
Are these oats gluten free?
No. Beyond the problematic nature of oats and their gluten status and digestibility — which we discuss in this blog post — Four Leaf’s oats are grown and processed in facilities that handle wheat, rye, and barley. We don’t recommend them for coeliacs or people with severe gluten intolerance.
How should I store bulk oats?
Keep in an airtight container in a cool, dark, dry place. Due to their stabilisation, these oats have a long shelf life (18 months from packaging), but for peak freshness, store them away from heat and strong odours. The big issue will be keeping pantry pests out. At the Sovereign Foods warehouse we store everything below 12ºC to ensure bugs don't move through their lifecycle. Are these rolled oats steamed?
Yes, as part of the stabilisation process. This is done gently to preserve texture and nutrition while extending shelf life by reducing the activity of the enzyme lipase, which can cause rancidity in oats by metabolising the fats.
Why is it such a big deal that these oats are grown in Australia?
A lot of organic rolled oats sold in Australian shops and other big suppliers are grown in Finland. in

Our Bags are made from brown recycled paper and have a 100% natural corn-based compostable biofilm. All you need to do is pop off the label before you put it in your compost (We are looking for a cost-effective compostable solution to our labels). These bags are a good short term but are not completely airtight. When you get your goodies home, be sure to pop your products into a jar and store them in a cool, dry place out of sunlight. You can reuse these bags around the house as a short-term solution to keep things dry and reduce air contact.
