If you are a lover of Indian cuisine wondered what is missing when you’ve cooked it at home—the answer could lie in the aromatic spice known as fenugreek.
Fenugreek is an annual plant in the Fabaceae (pea) family, native to Asia and the Mediterranean, with seeds and leaves that are both edible. It has small leafy greens that can be used fresh or dried and pods that contain small square-shaped golden seeds that are used as a spice or for medicinal purposes. Fenugreek has a distinctive maple syrup flavour and subtle bitterness.
Fenugreek seeds are often used as a sprout, but they can be a bit intense, so you may want to mix them in with a few other milder sprouts.
