This Hotscotch Landrace organic wheat grain is a light purple heritage wheat mix. When milled, yields a coarse, dark flour with a unique full flavour; perfect for a rich, rustic sourdough bread.

Hotscotch Landrace isn’t just a catchy name—it speaks to how this wheat is grown. A “landrace” is an old-world approach to growing wheat—where the grain naturally evolves over time in a specific region, shaped by local soils, climates, and farming methods. These landraces aren’t single varieties, but diverse populations of wheat that adapt to their environment, developing resilience to things like drought, pests, and disease. This particular Landrace is early in its development and you can see the different varieties of wheat through out the bag. Over time, these varieties will cross pollinate and natural selection will create a single variety suited to Burrum

This Hotscotch Landrace mix is a blend of rare, hard purple wheats you won’t find in your average bag of flour:

  • Purple Abyssinian

  • Purple Kernel Durum

  • Ethiopian Wheat (Triticum aethiopicum)

  • AUS Wheat

Grown and harvested here in Australia, these grains are ideal for home milling and slow-fermentation baking. The result? A richly coloured, flavour-packed flour with deep heritage roots and modern performance. Due to the nature of this landrace, we recommend coarsely milling these grains and blending them with a strong, modern wheat flour to add flavour and texture; or using it as a soaker to add some whole or cracked grains into your loaf.

This grain has been supplied to us by our friends Stephen and Tania Walter at Burrum Biodynamics in Marnoo, Victoria. In 2019, Steve and Tan took a handful of grains from the Horsham Genebank to trial some new grains. 2025 has been the first production scale harvest of this particular combination crop, and we're excited to share with you the results of this successful harvest.

FAQs

Is this suitable for sourdough?

Yes. Once milled, this grain produces a characterful wholemeal flour that’s been used by artisan bakers for sourdough and other rustic loaves. It has a medium-to-strong gluten profile depending on season and mill setting. It can also be used as a soaker if you would like to add some wholegrains into your favourite loaf recipe

How does it compare to modern wheat?

This is not a single variety but a genetically diverse population—flavour, colour, and performance may vary slightly from bag to bag. It’s less refined, more complex, and better suited to slower baking methods than industrial white flour.

Can I mill it at home?

Absolutely. This grain is ideal for home milling. A stone mill or electric grain mill will give you a fresh, full-flavoured wholemeal flour.

Are they organic?

They’re certified biodynamic through Demeter, which meets and exceeds organic standards. That means no synthetic fertilisers, pesticides, or GMOs—and a focus on holistic, regenerative agriculture.

What are biodynamic preparations?

They’re natural preparations made from herbs and minerals used in small amounts to support soil life and plant health. For example, horn manure and compost herbs help improve nutrient cycling and soil biology. You can learn more about them here.

What’s the best way to store it?

Keep the grain in an airtight container in a cool, dry place. For longer storage, consider refrigeration or freezing to protect from pantry pests. For more info, check out our blog post on pests, here

Product repacked by Sovereign Foods in compostable bags.

Our Bags are made from brown recycled paper and have a 100% natural corn-based compostable biofilm. All you need to do is pop off the label before you put it in your compost (We are looking for a cost-effective compostable solution to our labels). These bags are a good short term but are not completely airtight. When you get your goodies home, be sure to pop your products into a jar and store them in a cool, dry place out of sunlight. You can reuse these bags around the house as a short-term solution to keep things dry and reduce air contact.

Whole grain for sourdough

I am so enjoying the quality of all the grains I received. The order arrived quickly and everything is super fresh and mills beautifully. Im loving the flavour of the Hopscotch Landrace wheat and the spelt has made a couple of excellent sourdough cakes too.
