Savoury, aromatic, and perfectly balanced—these garlic roasted macadamias are a standout from Ecodamia’s small-batch, orchard-to-jar range. Stewart Neilson has paired the buttery crunch of his regeneratively grown Queensland macadamias with a punchy, roasted garlic flavour. It’s a moreish, umami-packed snack that also shines on a cheeseboard or crumbled over roasted veggies.
Each batch is roasted on-farm at Greens Creek near Gympie, then vacuum-sealed in glass jars for peak freshness and zero plastic. This is how macadamias should be.
About the Grower
Stewart Neilson is the farmer behind Ecodamia, a 10-hectare macadamia orchard planted with 2,700 trees and over 18 varieties. Stewart grows all his macadamias chemical-free, without synthetic fertilisers or sprays, and processes them entirely on-farm—from tree to jar
Harvested using soft rakes and a low-impact finger-wheel harvester, the nuts are dehusked, air-dried, cracked, and colour-sorted before being roasted in small batches in Ecodamia’s processing facility. His regenerative farming approach preserves soil biology, pollinator habitats, and native understory, ensuring each bag of macadamias reflects the ecology of the region.

Culinary Notes
Aromatic and savoury, these garlic macadamias aren’t just for snacking (although they’re dangerously good on their own). Try them:
-
Paired with cheese and olives on a grazing board
-
Sprinkled over roasted veg or pasta for crunch and flavour
-
Crushed into a crust for fish or chicken
-
Added to grain salads or stirred through rice pilaf
-
Or just straight from the jar on the back veranda with a cold beer
Storage
Because Stewart doesn’t cure (dry) his macadamias before roasting, they retain a uniquely creamy interior. To preserve this freshness, store in a cool, dark place and refrigerate after opening.
Ingredients: Macadamia, Local Garlic Powder (1%), Celtic Sea Salt
FAQs
Are these certified organic?
Not yet—but they’re grown without synthetic inputs under a strict chemical-free regime. Stewart is working toward certification, with recent audits placing his orchard “in conversion.”
Are these roasted in seed oils?
No. These are dry-roasted with garlic and salt—no seed oils, preservatives, or additives involved.
Can I reuse the glass jar?
Absolutely. Ecodamia’s packaging is intentionally plastic-free and designed for reuse—perfect for pantry storage or gifting.
Do they contain dairy or gluten?
No. These macadamias are naturally gluten- and dairy-free. However, Stewart does do some chocolate coated macadamias onsite so their may be a small chance of cross contamination.
