Khorasan wheat, often referred to as Kamut®, is a type of ancient grain with origins that date back thousands of years. Believed to have been first cultivated in the Fertile Crescent, an area encompassing parts of modern-day Iraq, Syria, and Turkey, Khorasan wheat is one of the earliest domesticated grains. Its name, "Khorasan," is derived from a historical region in northeast Iran, where the grain was widely grown.
Khorasan wheat largely fell out of cultivation as modern wheat varieties became dominant due to their higher yields and easier processing. However, the grain was rediscovered in the late 20th century. The story goes that in the 1940s, a U.S. airman stationed in Egypt sent a handful of unusual wheat seeds back to his family in Montana. These seeds were later identified as Khorasan wheat.
The true resurgence of Khorasan wheat began in the 1980s when Bob Quinn, an organic farmer in Montana, came across these seeds. Fascinated by their potential, he began cultivating and promoting the grain under the trademarked name Kamut®, which means "wheat" in ancient Egyptian. Quinn's efforts helped reintroduce Khorasan wheat to the modern market, focusing on its nutritional benefits and unique flavour.
Khorasan wheat has garnered attention for its impressive nutritional profile. It is higher in protein, vitamins, and minerals compared to modern wheat. The grain is particularly rich in selenium, zinc, magnesium, and vitamin B. Additionally, many people find it easier to digest than common wheat, making it an attractive alternative for those with mild gluten sensitivities.
Khorasan wheat is versatile and can be used in a variety of culinary applications. Its large, golden kernels have a firm texture and a rich, nutty flavour, making it suitable for use in salads, soups, stews, and bread. It can be used as a whole grain or ground into flour, providing a nutritious alternative to modern wheat.
