This soft, fine organic white Khorasan flour is made from Australian-grown Khorasan wheat, an ancient grain with roots in the Khorasan region of Asia. Milled by Wholegrain Milling Co. in Gunnedah, NSW, the grain is roller milled and fully sifted to remove all bran, producing a light, creamy-coloured flour with a gentle nutty flavour.

Also known as Kamut® (a registered brand name of Khorasan), this ancient wheat is prized for its flavour, nutrition, and digestibility. While it contains gluten, many people find it easier on the gut than modern wheat. Its natural sweetness and golden hue make it an excellent flour for both savoury and sweet bakes.

With a minimum protein content of 12%, this flour performs well in sourdough, flatbreads, muffins, pancakes, and cakes. It brings a distinctive smoothness and warmth to baked goods, with a soft crumb and mild cereal aroma.

Our Bags are made from brown recycled paper and have a 100% natural corn-based compostable biofilm. All you need to do is pop off the label before you put it in your compost (We are looking for a cost-effective compostable solution to our labels). These bags are a good short term but are not completely airtight. When you get your goodies home, be sure to pop your products into a jar and store them in a cool, dry place out of sunlight. You can reuse these bags around the house as a short-term solution to keep things dry and reduce air contact.

Taste, softness, awesomeness in a sourdough

Made a 30 hr cold long ferment sour dough with this Khorasan flour and some gluten flour. I have experienced nirvana... the softest crumb, the tastiest loaf. Family demolished a 1 kg loaf in 24 hours and want more. I eat low carb to prevent insulin resistance and future blood sugar issues, this loaf did not raise blood glucose above 6.4 abd was back to normal under 2 hours, amazing, I got bread back!

Perfect for sourdough

This flour was perfect for a sourdough focaccia loaf. The white Khorasan has a rich flavour and a yielded a loaf with a pleasing density. We will certainly use it again
