Rich, dark, and deeply aromatic, Rosnay’s vino cotto is a traditional Italian-style cooked wine reduction made on-farm from organic wine grapes. It offers a balance of sweet, tangy and winey depth—ideal as a drizzle, glaze or finishing touch in both sweet and savoury dishes.
Inspired by ancient Italian peasant traditions, Rosnay left a few rows of their shiraz grapes to wither and dry on the vine for weeks after the wine vintage. The dried grapes were then crushed and the must was reduced over 4 days to one third of its original volume. The reduction was was produced slowly in a steam jacketed kettle with constant stirring, at a maximum of 65ºC, using 100% solar power. The resulting rich nectar was then settled for a few months before reheating and bottling without any additives or filtration. This is an authentic vino cotto contains no preservatives, vinegar, sugars or added thickeners and is made from 100% premium wine grapes.
In terms of flavour, Vino Cotto is quite sweet, while it is often compared to Balsamic Vinegar as it can be used in many of the same ways, it doesn't have the same acidity. It is very much in its element with strawberries and sweet dishes, but it can also works well is with caramelising onions or marinating meat dishes. Store in a cool, dark place. Once opened, refrigerate and consume within several months. The viscosity may increase slightly with refrigeration.

Is vino cotto the same as balsamic?
No. Vino cotto is a cooked grape reduction—not fermented vinegar—so it has more sweet and wine-like character rather than vinegar sharpness.
Does vino cotto contain alcohol?
No. The cooking process reduces alcohol content, leaving behind flavour and complexity.
Is it suitable for vegans?
Yes. It contains no animal-derived ingredients.
Can I use it in place of syrup or honey?
