This is a coarse sea salt with large, stable crystals — up to 3.5mm. It is most commonly used in grinders and for specific culinary applications where structure, heat retention, or controlled salting is required.

Rock salt behaves differently to fine or flake salts. The large crystals dissolve slowly, making it suitable for salt crusts, curing, and cooking methods where the salt is not always consumed directly.

Why This Salt

  • Large crystal size for controlled salting

  • Suitable for grinders and salt mills

  • Useful for salt crust baking and curing

  • Australian produced from natural seawater

  • No additives or processing aids

About the Salt

This rock salt is produced in Australia by Olsson’s using solar evaporation. After harvesting, the salt is refined and sieved to achieve a coarse crystal size, with particles significantly larger than standard cooking or fine salts.

The salt has a clean, neutral flavour and high purity sodium chloride. Its large crystal structure makes it useful where slower dissolution or physical structure is required during cooking.

Culinary Uses

Rock salt is commonly used for:

Salt crust baking

Packing whole fish or shellfish in moistened rock salt creates a sealed crust that traps steam and helps retain moisture during cooking.

Curing and preserving

Large salt crystals draw moisture from fish and seafood, supporting preservation and flavour development.

Grinders and mills

The coarse crystal size suits manual and electric salt grinders.

Seafood preparation and service

Rock salt can be used as a stable base for oysters or shellfish, helping prevent tipping and retaining cold temperature.
