About the Salt

This fine sea salt is produced in Australia by Olsson’s using a solar evaporation process. After harvesting, the salt is refined and sieved to achieve a fine, consistent crystal size.

The smaller particle size means there is less air space between crystals. When measured by volume, this salt will weigh more than a coarse salt. For that reason, it is best used in recipes that specify salt by weight rather than spoon measure.

The salt is high purity sodium chloride with low moisture content and a clean, neutral flavour that supports rather than dominates food.
