Fenugreek is an annual plant in the Fabaceae (pea) family, native to Asia and the Mediterranean, with seeds and leaves that are both edible. It has small leafy greens that can be used fresh or dried and pods that contain small square-shaped golden seeds that are used as a spice or for medicinal purposes. Fenugreek has a distinctive maple syrup flavour and subtle bitterness.

Fenugreek is often used as a sprout, but it can be a bit intense, so you may want to mix it in with a few other milder sprouts.
