Broadly speaking, Farro type of hulled wheat is a typically used in salads, soups, and side dishes. Globally, there are three common varieties of farro:
Einkorn a.k.a. farro piccolo
Emmer a.k.a. farro medio
Spelt a.k.a. farro grande
