Also for something a little different, here's a recipe from a friend of Sovereign Food's that can be used with some of our beautiful produce!

Mixed Lentil Salad

1 ½ cups of any type of lentils of your choice, soaked separately overnight. (eg. split yellow mung bean, whole green lentils, split or whole chick peas, split green peas, black eyed beans etc -- the options are endless!)

1 cup mung bean sprouts (optional)

1 or 2 green chillies finely diced (optional )

2 tbsp very finely diced red capsicum

1 small red onion finely chopped

1 large firm tomato finely diced

1 bunch fresh coriander, washed and finely chopped


A third cup lemon juice (or lime, or ½ & ½)

A quarter cup olive oil

1 level tsp salt

1 level tsp coarse black pepper

Half a tsp cumin powder

A good pinch of red chilli flakes (optional)

½ - 1 tsp fresh grated ginger

Finely grated lime rind ( zest)

Mix all well together in a large bowl, add all above ingredients except the lentils

Mix well.

Boil some water (approx. 2 cups) with 2 tsp stock powder and some salt.

Add each type of lentil or bean separately and boil till just done but still firm. Drain and allow to cool. Be careful not to overcook lentils. Once cool add to above mixture and stir well. Chill till required.
